Seafood Gumbo

Ingredients:

1 gallon chicken stock

1 gallon shrimp stock

1 gallon beef stock

½ gallon lobster stock

2 cups roux (see note)

1 teaspoon ground cumin

2 Tablespoons Old Bay

1 Tablespoon onion powder

1 Tablespoon garlic powder

½ teaspoon cayenne pepper

1 Tablespoon paprika

2 Tablespoons Gumbo File (seasoning) 2 bay leaves

3 cups medium diced onions

3 cups medium diced green bell peppers 3 cups medium diced celery

2 cups diced tomatoes

1 pound Andouille sausage

1 pound small scallops

1 pound okra

1 cup chopped green onions

Cooked white rice

Directions:

Roux: equal parts melted butter and flour. Cook for about 8-10 minutes until it turns a nutty brown color.

In a heavy-bottomed pan (like a Dutch oven), make the roux. Add all vegetables and liquids and let it come to a boil, stirring every few minutes.

Add all seasonings and additional ingredients and let cook for another 35 minutes or until seafood is cooked and is falling apart. Pour over cooked white rice.

Substitutions/additions: shrimp, salmon, crawfish, white fish (we use a mix of ingredients)

Nestled in Georgia's stunning Golden Isles, Jekyll Island is a serene coastal escape offering pristine beaches, rich history, and endless adventure. Known for its tranquil beauty and unique charm, this island is the perfect destination for those seeking a peaceful retreat with plenty of activities to enjoy.

The Westin Jekyll Island Beach Resort is adding to its allure. The four-star luxury property has unveiled an exciting culinary transformation under the guidance of renowned chef Lindsay Autry. A three-time James Beard Award nominee, Chef Autry brings her Southern-meets-Mediterranean flair to the island with three unique dining experiences: Willet's Lowcountry, serving coastal Southern cuisine; Pour Tabby, a quaint bar that sits adjacent to an oversized veranda; and Salty's, a poolside grill that makes spending the day beach or pool side easy. Open to visitors and locals alike, each venue aims to become a community staple, capitalizing on the bounty of local seafood and new menus designed by Chef Autry to feature her Southern-meets-Mediterranean cooking style.

“I was inspired by the overwhelming character and history of Jekyll Island,” Chef Autry says. “The goal with the new concepts was to celebrate that character, embrace regional produce and ingredients, and create experiences that will draw in Westin guests and visitors ready for a fresh take on dining on the island.”

Originally from Eastern North Carolina, Chef Autry grew up helping with her family's peach orchard and honoring her early skills in 4-H cooking competitions. This simple, southern childhood gave Chef Autry a love for cooking and ultimately inspired her to pursue a career as a chef. Earning a culinary degree from Johnson & Wales, Chef Autry trained in cities along the Eastern seaboard (Charleston, SC, Miami, FL, Palm Beach, FL), as well as Mexico, before planting roots in West Palm Beach, where she owned and operated the culinary hot spot, The Regional. For her work at The Regional, Chef Autry received three consecutive James Beard Award nominations for "Best Chef: South" (2018-2020).

Chef Autry consulted with the culinary team at Westin Jekyll Island to bring her elevated and eclectic perspective to Willet's Lowcountry, Pour Tabby, and Salty's. Chef Autry leaned into the abundance of local seafood on Jekyll Island – and her background of Southern cooking with Mediterranean influence – to create menus that are rooted in place, light, and refreshing (a combination that plays nicely with the hotel's location on the Georgia coast and the Westin brand's focus on wellness). Keeping in line with what Westin Hotels are known for, with wellness at the forefront, all menus have a sizable selection of health-conscious options, including local, organic, and sustainably sourced ingredients whenever possible. The restaurant spaces have also undergone complete renovations (with a screened-in veranda so guests and visitors can enjoy dining outdoors), bringing to life a design and feel that more closely reflects coastal Georgia.

When April's infant son began suffering from eczema, an unexpected journey was set into motion. A local pharmacist suggested that April stop using commercial soaps, laundry detergents, and skin products, recommending instead that she make these items herself at home. With a heavy dose of determination, April set out to teach herself the art of soap-making. What started as a kitchen experiment soon evolved into the birth of Old Whaling Company, a company now celebrated for its unique, handcrafted bath and body products.

Launching her business from scratch, April dove into completely new territory. Neither she nor her family had any prior experience in the home and body product industry. Despite this, she was driven by a long-held dream of owning her own business. The challenge of creating something beneficial for her family, coupled with her newfound passion for soap-making, provided the perfect opportunity to realize this dream.

In 2012, April and her family moved to Charleston. It was here that Old Whaling Company was formally established, and Charleston has remained its home ever since. He originally delivered cookies via a Model T Ford, and today, it’s still headquartered in Savannah and sells its sweet and salty snacks locally and around the world.

There’s always a reason to visit Charleston, and one of the biggest ones of the summer is Spoleto Festival USA. The annual performing arts festival brings together the very best in theater, dance, and music for 16 days each year. This year, the festival will be hosted May 26 through June 11 across the Holy City’s theaters, churches, and outdoor spaces.

Now in its 47 ^th season, Spoleto was originally founded in 1977 by Pulitzer Prize-winning composer Gian Carlo Menotti, Christopher Keene, and others who wanted to bring a version of Italy’s Festival of Two Worlds to America. Learn more here .

Family friendly meets coastal perfection on the Alabama Gulf Coast

Whatever you’re looking for in a coastal destination, chances are you’ll find it on the Alabama Gulf Coast. Nestled between the Mobile Bay and Pensacola, Florida, the Alabama Gulf Coast is comprised of three charming communities: Gulf Shores, Orange Beach, and Fort Morgan. Combined, these coastal cities offer mile after mile of soft sugar-white sand, the beautiful blue-green waters of the Gulf of Mexico, and therefore, some of the most spectacular views in the South.

While the Alabama Gulf Coast may offer fewer miles of coastline than some of its neighbors—it only spans 32 miles of coastline in total—it packs the absolute most in it well beyond the beach. The Alabama Gulf Coast offers some of the best charter fishing in the entire country—its shores are practically legendary when it comes to fishing for everything from red snapper and mackerel to grouper and amberjack. There’s military history thanks to historic Fort Morgan, which dates back to the early 1800s and was in active use in four separate wars. There are also greens to be enjoyed besides the waters of the Gulf thanks to the area’s numerous golf courses (and mini golf courses for those young at heart!). Doc’s Seafood Shack & Oyster Bar

Doc’s Seafood Shack & Oyster Bar has been serving the Alabama Gulf Coast since the early 1980s, and the laid-back atmosphere of this local favorite will make anybody a fan of Doc’s. What helps, of course, is its mouthwatering menu that includes everything from seafood gumbo and fried shrimp to crab cakes and all sorts of fresh fish.

Cosmo’s Restaurant & Bar

Coastal charm is on full display at Cosmo’s Restaurant & Bar. In addition to its standard indoor dining, the Orange Beach eatery offers a charming outdoor patio complete with string lights and oftentimes live music. The ambiance adds to an already delightful menu, which is topped off with its well-known Banana Leaf Wrapped Fish.

Between Gulf Shores and Fort Morgan is the Bon Secour National Wildlife Refuge, a 7,000-acre wildlife habitat that serves as home for all sorts of migratory birds, sea turtles, and the endangered Alabama beach mouse. Visitors can take it all the views on a trail walk through its trail system, which includes trails highlighting each type of habitat at the refuge, including dunes, swales, wetlands, maritime forests, and scrub habitats.

The Wharf

The Wharf is the destination for all things entertainment in Orange Beach. The Wharf is home to a variety of restaurants, boutiques, marina, movie theater, and even amphitheater. In Full Bloom: Brookgreen Gardens

Everything is coming up roses at one of the most beautiful destinations in the Lowcountry

Springtime on the South Carolina coast means more than the warm sunshine, salty ocean breeze, and soft sand between your toes. On the Palmetto State’s Hammock Coast, an area located between Charleston and Myrtle Beach, it also means the most spectacular seasonal blooms are on full display at Brookgreen Gardens.

Founded in 1931, Brookgreen Gardens is a 9,127-acre property nestled between Murrells Inlet, the “Seafood Capital of South Carolina,” and Pawleys Island, a three-mile-long barrier island. The historic estate is home to the largest collection of American figurative sculptures in the country, wildlife preserve, zoo, and the crown jewel of the property: one of the country’s most premier botanical gardens.

The botanical gardens is broken into four specific sections, each with their own unique appeal but all with stunning beauty. Live Oak Allée is where you’ll find oak trees that date back 250 years. These oak trees were planted in the early 1700s at a time when the property was being utilized as four rice plantations. There’s also the Butterfly Garden, which has four wings and is home to a wide variety of flora and fauna that lead into the Huntington Sculpture Garden. Then there’s the Brenda W. Rosen Carolina Terrace Garden, which features a plethora of perennials, roses, shrubs, and trees. Lastly, there’s the Palmetto Garden. Named as a nod to the state tree, the section houses beautiful Sabal palmettos and the ever-popular Fountain of the Muses Garden, which displays the sculpture of the same name.

In addition to the many sculptures that can be found while perusing throughout the gardens, the 2,000-strong collection of sculptures by 430 artists can also be found in a variety of indoor galleries and exhibits, along with other smaller pieces such as paintings and etchings.

For those seeking more than a picturesque backdrop of beautiful blooms or even world-renowned sculptures, be sure to check out the thousands of acres in Brookgreen’s Lowcountry History and Wildlife Preserve, which features not only many native plants and animals to the South Carolina Lowcountry but also the property’s historic rice plantations. Between March and November, visitors can check out the property via pontoon boats on the Creek Excursion or via bus on the Trekker Excursion.

Gingerline bills itself as a “cocktail destination with a food menu to match,” and the drink menu can most certainly speak for itself. That includes cocktails like Pretty In Pink, which features a strawberry-beet reduction, the Bourbon & Peach, which includes spiced peach liquer, and the Blackberry Smash, which features the flavors of blackberry, rosemary, lemon, and spiced rum. The brunch menu has its own menu of specialty cocktails, including the Yourmosa, with sparkling wine of your choice, guava, passion fruit, and orange juice, Sin Sal, which includes smoked grapefruit, lemon, and fever-tree pink grapefruit, and the ever-popular Charleston Bloody Mary, a southern staple featuring Tito’s vodka, Charleston bloody mary mix, and lime.

Ready for an adventure along the Mississippi Coast? Whether you’re looking to take in the sights on a stern wheel paddleboat cruise, enjoy a good book on the beach, or simply enjoy the culinary scene, here are three authentically Coastal Mississippi towns you don’t want to miss.

Bay St. Louis

You may not have ever heard of Bay St. Louis, but that hasn’t stopped the accolades from rolling in to this quaint coastal community. Bay St. Louis has been named one of the coolest small towns in America and a top 10 small beach town, as well as one of the best places to live in Mississippi. After one visit, it’s no surprise as to why. The town features beautiful white sand beaches the whole family will enjoy. A popular experience is catching a ride abord the Betsy Ann Riverboat, a stern wheel paddleboat with the best upper deck views of the Mississippi Sound to spot dolphins, pelicans, and herons.

There’s also plenty to experience off the sand as well. Downtown Bay St. Louis is home to a number of boutiques, art galleries, and antique stores. Perusing the one-of-a-kind shops is also a great way to work up an appetite for one of downtown’s many culinary options, such as Ruth’s Roots, The Blind Tiger, Trapani’s Eatery, Field’s Steak and Oyster Bar, and Cuz’s Oyster Bar.

Pass Christian

Known by locals as “The Pass,” Pass Christian is the quintessential Mississippi Gulf Coast destination thanks to its majestic old oak trees, natural coastal beauty, and beautiful historic homes.

The slower pace of life here encourages visitors to slow down, relax, and enjoy all the community has to offer, whether it be action-packed adventure while deep see fishing on a private charter boat, hitting the links at one of the local golf courses, lounging on the pristine white sand beach, or even taking a scenic drive through the historic district. A fun family activity is a visit to the Enchanted Nature Trail. On this walk through the woods, visitors will spot bug hotels, a butterfly garden, outlook points, a vine tunnel, and even a “faerie house.”

The exploration of Pass Christian continues with a visit to its many locally-owned boutiques, gift shops—like Thou Art Gallery & Gifts, which features work by many local artists—and antique stores—be sure to check out Iron Magnolia Antiques & Collectibles for those truly can’t-find-it-anywhere-else pieces. On the way to a morning or afternoon of shopping, be sure to stop by Cat Island Coffeehouse, where in addition to a freshly brewed coffee you can also pick up your next favorite beach read (and enjoy an incredible view of the Mississippi Sound!).

Ocean Springs

Coastal charm meets the arts in Ocean Springs. This small town—known as the “City of Discovery”—offers all of the natural appeal you’d expect from a Coastal Mississippi destination, including quaint cottage communities and centuries-old live oaks.

But here (living up to its well-known nickname), you’ll also discover all sorts of experiences dedicated to the creative arts. For more than three decades, downtown Ocean Springs has served as home to the Walter Anderson Museum of Art. A favorite of both locals and tourists alike, the Museum showcases the work of Walter Inglis Anderson and other prominent artists. The town is also home to the Peter Anderson Arts & Crafts Festival, the largest arts festival in Mississippi and the Gulf Coast. Now in its 45th year, the annual event takes place each November and was created to honor master potter Peter Anderson and celebrate the local arts community.

An excuse is never needed to plan a getaway to one of the South’s many unique coastal destinations. But if you’re looking for one, here we share 10 of the best festivals going on this fall. From the flawless fall weather and beautiful beach backdrop to the can’t-find-it-anywhere-else culture and cuisine, these unique events will most certainly have you planning a weekend getaway—or two!

National Shrimp Festival

Gulf Shores, Alabama

It’s not fall on the Alabama Gulf Coast without the Annual National Shrimp Festival. To be held October 6 through 9 in Gulf Shores, this annual event—now in its 49 ^th year—is all about the food: shrimp prepared practically any way possible, crab cakes, conch fritters, lobster, and so many other seafood favorites, as well as many typical festival foods like fried Oreos and funnel cakes. The offerings continue with all sorts of musical entertainment, from local and regional acts to major national bands. Also on the agenda is an arts and crafts festival with 200-plus vendors, children’s activities, sand sculpture contest, and even 10K and 5K races.

Inaugural Gumbo Fest

Gulfport, Mississippi

New to the landscape of Gulfport, Mississippi, is the Inaugural Gumbo Fest. This new event was established as a celebration of the many communities in the region that are different and distinct, yet come together as “One Coast.” To be hosted November 19 at the 48-acre resort complex Centennial Plaza (a formerly military installation), the festival will crown a winner for best gumbo in the “Stir Da Roux Gumbo Cook-Off,” as well as a Mayor’s Cup competition between all of the local mayors. In addition to sampling all the gumbo, attendees can peruse arts and crafts from regional artists and listen to live music from a variety of musicians.

Jekyll Island Shrimp & Grits Festival

Jekyll Island, Georgia

There may not be a festival more food-forward than the Jekyll Island Shrimp & Grits Festival. This annual favorite—which is celebrating its 15 ^th anniversary this year—returns November 4 through 6 to bring live music, an artist market, kids activities, and, of course, coastal cuisine. Throughout all three days, chefs will be serving up their unique variations of one of the South’s most renowned dishes, shrimp and grits. Also going on during the weekend is the Craft Brew Fest, which will feature a wide array of breweries.

Beaufort Shrimp Festival

Beaufort, South Carolina

The beautiful backdrop of downtown Beaufort will be hosting the 28 ^th Annual Beaufort Shrimp Festival. The festival will be the prime destination for all things shrimp on October 7 and 8 as some of the region’s top restaurants and chefs will be dishing out a variety of shrimp dishes. Also on hand: an arts and crafts market and lots of live music.

The Fall Tours of Architecture, History and Gardens

Charleston, South Carolina

There’s perhaps no better way to take in the incredible homes, architecture, and landscaping in Charleston than with The Fall Tours. Put on by the Preservation Society of Charleston, The Fall Tours feature a range of potential activities, from piazza and garden tours to tours that take visitors inside some of the Holy City’s most unique properties. Now in its 46 ^th year, The Fall Tours will be held October 5 through 29. Advanced tickets are recommended.

Miami Carnival

Miami, Florida

Culture meets celebration at Miami Carnival. Held October 1, 7, 8, and 9, this multi-day event features four signature events: Junior Carnival, Panorama, J’ouvert, and Parade of Bands and Concert. Caribbean culture will be on full display, drawing visitors and participants from around the world.

Alys Beach Crafted

Alys Beach, Florida

Everyone has a story to tell, and that’s precisely what Alys Beach Crafted aims to help do when it comes to crafted beverages and cuisine. Planned for October 21 and 22, Crafted will bring together artisans, distillers, brewers, mixologists, and chefs to showcase their craft and the creativity behind it. The weekend will feature a variety of unique events, including Firken Fete, which includes beer samples, live music, and delicious eats.

Nola x Nola

New Orleans, Louisiana

New Orleans is known for its music, and this fall the Big Easy comes alive with a musical celebration. Scheduled for September 23 through October 9, venues all over the city will feature must-see live music events that speak to the unique culture and history of the historic southern town.

Outer Banks Bluegrass Island Festival

Outer Banks, North Carolina

One of the newest events in the Outer Banks has quickly become one of its favorites: the Outer Banks Bluegrass Island Festival. The three-day festival—to be hosted October 20 through 22—packs a musical punch thanks to the long list of scheduled bands that will be playing at Roanoke Island Festival Park. In addition to enjoying some of the best bluegrass around, the festival also offers a picturesque backdrop along miles of coastline.

Foo Foo Fest

Pensacola, Florida

Whether you’re looking for arts, culture, cuisine, theater, music, history, or just a beautiful beach, you’re sure to find it in Pensacola during Foo Foo Fest. Held over the course of 12 days each fall, the event’s agenda has more offerings than the beach does sand. This year the festival takes place November 3 through 14.
